My name is Juan and I own Wapos Cantina
In 2010, Atilano — better known as Juan — and his wife Adriana turned a lifelong dream into reality with the opening of the very first Wapos Cantina in Boulder, Colorado. With nothing but determination, grit, and a love for great food, the couple poured their hearts into creating a space that felt like home for the community — blending bold Mexican flavor with thoughtful, healthy ingredients.
Boulder, a city known for its conscious eaters, inspired Juan and Adriana to build a menu unlike any other: gluten-free, vegetarian, organic, and 100% authentic Mexican dishes rooted in their heritage. It wasn’t easy — for the first three years, they did everything themselves. From cooking and bartending to washing dishes and waiting tables, Juan and Adriana ran the show seven days a week. To keep their dream alive, they even worked late-night shifts at a friend’s nightclub in Denver after closing the restaurant.
Together, Juan and Adriana have grown Wapos Cantina from a single restaurant to a growing family of locations across Colorado, including Lafayette (Dos Wapos), Erie, Thornton, Olde Town Arvada, and Westminster — with a new West Highlands location in the works for summer 2026.
